Can anyone tell me how to hide the customer details from every other user. Is it as simple as not having it as a field at sign up and just asking for an email address? The only problem is ,what if admin needs to get in touch with them. And can the admin see all of the phone number and people who are only browsing the site only see some of it. Just like ebay.

I have the basic info on registration name, email etc
Then on the for the listings i have thinks like phone number, address, postcode/zipcode of which i hide address and postcode field, to hide these you need to edit the listing field in admin and untick the 'show on details page' and maybe untick show on google map.
